There’s something exciting happening on Albuquerque’s Westside — Tamashi West is entering a new era under the leadership of Chef Bou, our new Restaurant Manager and Head Chef.

With more than 30 years of experience in Japanese cuisine, Chef Bou brings both skill and soul to every dish. His culinary journey began humbly in 1994 as a busser at Japanese Kitchen, where he learned the rhythm and respect that define a great restaurant. That early start fueled a lifelong passion for excellence.

Chef Bou later refined his craft at the world-renowned Sushi Den under Michelin-starred Chef Toshi Kizaki, mastering traditional techniques and a dedication to the finest ingredients. He went on to serve as Head Chef at Mizu Izakaya, where he balanced innovation with authenticity.

After two incredible years at Tamashi Heights, Chef Bou now brings his culinary vision, leadership, and artistry to Tamashi West — and he’s ready to share it with the Albuquerque community.
